Turkey Meatball Soup

If you know me or have been following along with my blog for some time now, you know I’m obsessed with meatballs (as mentioned herehere, and here). It’s gotten to the point that friends of mine text me any time they eat a meatball or pass a meatball restaurant in NYC. I can’t help it, though, I could seriously eat meatballs everyday if it was a healthy thing to do. I’m so excited because a week from today we’ll be moving into our new place, and I really can’t wait to spend time in my new kitchen and cook. I don’t even know the last time I cooked, I’m embarrassed to say. I’m in the process of looking up all sorts of recipes to make, and of course ones that incorporate meatballs are at the top of my list. Here are the ones I’m currently inspired to try.

Those look great. I bet you could substitute ground chicken if you’re into more healthy eating, like “less red meat”!!!

I’m lucky–my mom makes literally the BEST meatballs ever, so I’ve never had to experiment with other recipes. However, turkey meatballs are a whole different story–those look so good!

  22. You’re giving me something fantastic to do with the ground turkey calling for cooking from our freezer. The soup up top looks great, and would finally put a dent in our CSA boxes insane potato haul! Nice little round-up. 🙂
